Jackfruit seed is one of the tasty seed which is available inside the jackfruit. Jackfruit seed is favourite item for anyone who likes to have jackfruit dishes. It is mainly used by Keralites because it is their special item in summer season. South Indians will have this fruits in their houses so it became favourite for them. They will be very much busy to make jackfruit and jackfruit seeds dishes in summer season. As we know that jackfruit is the biggest fruit in the world. All parts of jackfruit is useful to make dishes. Jackfruit seeds are very healthy which contains a lot of health benefits. This is very helpful to prevent and decrease the cancer and it is scientifically proved so we can consider this as the medicine for dangerous diseases. Today I am showing very good jackfruit seed recipe which is very useful to those who likes to have traditional dishes. This seeds will have creamy effect after cooking it. It is the favourite dish for Keralites and they are making it in their houses some times.
Jack fruit seeds mango curry is one of the traditional Kerala recipes. In summer season, we will get a lot of jack fruits and its seeds so we can make different dishes by using this seeds. It is the combination of raw mango and jack fruit seeds. This dish is looking very attractive with good yellow colour.

Ingredients

Jack fruit seeds - 30
Raw Mango pieces - 1/4 cup
Grated Coconut - 1 cup
Onion - 2
Green Chilli - 4
Turmeric Powder - 1/2 teaspoon
Curry Leaves - 2 sprigs
Coconut Oil - 1 tab spoon
Shallot - 5
Mustard Seeds - 1 teaspoon
Fenugreek Powder - 1/4 teaspoon
Salt - To taste
Water - As required

Method


  • Remove the peel of jack fruit seeds and cut it as half pieces and keep it aside.
  • Remove the peel of raw mango and cut it as small pieces and keep it aside.
  • In a grinder, add grated coconut, onion, green chilli, turmeric powder and curry leaves and make it paste and keep it aside.
  • Put jack fruit seed pieces in a pot and pour required water and salt.
  • Then cover the pot with lid and cook it half.
  • Then add mango pieces to this half cooked jack fruit seeds and cook it well.
  • Then mash it well by using ladle and add paste and mix well.
  • Then cover with lid and boil well and keep it aside.
  • In a pan, heat coconut oil and splutter mustard seeds.
  • To this add chopped shallot and curry leaves and stir until fry.
  • To this add fenugreek powder and pour it into curry and mix well and serve it. 
Tips
  • To get more smell and taste add 1/4 teaspoon cumin seeds when paste grated coconut.
  • You can add 2 dried red chillies when splutter mustard seeds.
  • We have to choose mango which have less sour taste to get required sour taste of this dish.
