Red lentils are full of protein and it is mainly used by vegetarian. This is the main item for north Indians to make different dishes. Different types of lentils in shops and super markets. Here I used soft and orange colour red lentils and we can make a lot of dishes by using this. Lentils stir fry, red lentils with spinach curry and lentils masala curry is the main dishes of lentils. Keralites are using these lentils to make sambar and I am usually using this to make sambar in my house. These lentils is really very tasty and very useful to increase the protein content in the human body. It provides skin glow and reducing ageing problem and helps to keep young. Today I am going to share red lentils potato curry.
It is very good and tasty vegetarian curry and it is very simple and easy method to make at home. It is the combination of red lentils and potato. We can make it very cost effective with limited or less ingredients. To get thick curry we have to mash red lentils and potato together by using ladle. It is mainly served as the side dish of chapati and rice for lunch and dinner. It is like masala curry so we need not add cumin seeds but we can use fenugreek powder instead of cumin seeds. Usually everyone is cooking red lentils with cumin seeds combination but here we are not using cumin seeds that are the main specialty of this curry and will get different taste. It is thick and has creamy effect and I followed completely traditional method to make this. 

Preparation Time - 10 minutes
Cooking Time - 25 minutes

Ingredients

Red Lentils - 1/2 cup
Potato - 2
Onion - 2
Green Chilli - 2
Grated Coconut - 1 cup
Turmeric Powder - 1/2 teaspoon
Chilli Powder - 1 tab spoon
Coriander Powder - 1 1/2 cups
Fenugreek Powder - 1/4 teaspoon
Coconut Oil - 1 tab spoon
Mustard Seeds - 1 teaspoon
Shallot - 2
Curry Leaves - 2 sprigs
Water - As required
Salt - To taste

Method

  • Remove the peel of potato and cut it as cubes and put it in a pressure cooker.
  • To this add sliced onion, green chilli, curry leaves and red lentils.
  • Then pour required water and salt to this and cover the cooker with lid and cook it until 2 whistles.
  • Mash it well by using ladle and keep it aside.
  • In a grinder, add grated coconut, turmeric powder, chilli powder and coriander powder and make it paste and keep it aside.
  • In a pan, heat coconut oil and splutter mustard seeds.
  • To this add chopped shallot and curry leaves and stir it until fry.
  • Then add fenugreek powder and masala paste and stir well.
  • To this add cooked red lentils and potato mixture and add salt.
  • Then pour required water and cover the pan with lid and boil well.
  • Transfer it in a serving bowl and serve it.
Tips
  • It will be tastier if you add only Shallots instead of using onion.
  • You can add some curry leaves when splutter mustard seeds.
  • You can cook it in coconut milk to get more taste instead of using water.
