MILK (PAAL) PAYASAM


Vishu is one of the special traditional celebrations of Keralites. Today, Keralites are celebrating Vishu so they all are very much busy to make different dishes. In this celebration Keralites are making vegetarian dishes and serving different types sweet payasam as the main dessert. Vishu is Hindu festival and mainly they are preparing 'Vishu Sadya' which is including meal, stir fries and desserts. I have made very tasty paal payasam for this special day. I like this payasam very much and it is very easy to make. We are making different kind of payasam in my house because everyone likes payasam very much. It has very attractive white colour so I like to make this very much. We can serve this as a dessert after lunch.

Pal payasam or milk payasam is very familiar to everybody and almost everyone has tasted it at least once. We will first remember milk payasam and vermicelli payasam when we hear payasam first time. It is not new dessert it was there long years ago and still its popularity is increasing. Mainly we are serving payasam for onam, vishu and Hindu wedding and it is mandatory for this celebrations. You can serve milk payasam both cold and hot and both are really tasty. We can make it with limited ingredients and its main ingredients are milk and raw rice. We will get a special and variety flavour when we mix milk and raw rice together. Condensed milk is giving good taste and creamy effect to this dessert. I like to make this payasam by this method. You can make Milk Payasam in different ways which you prefer. I love this payasam very much and I followed my grandmother was following earlier. You can serve this with lot of love and happiness to others in this special day. Its taste is amazing so enjoy a lot with this tasty dessert.

Preparation Time - 10 minutes
Cooking Time - 30 minutes
Decoration - fried raisins

Ingredients

Milk - 1 litter
Raw Rice - 3 Tab spoon
Ghee - 2 tab spoon
Condensed Milk - 2 Tab spoon
Sugar - 1/4 cup
Raisins - 1/4 cup
Cardamom Powder - 1/4 teaspoon
Salt - 1 pinch

Method
  • Wash raw rice gently and roast it in a pan.
  • Add 1 tab spoon ghee and stir well.
  • To this add 1/2 litter milk and cover the pan with lid and cook it well.
  • Then add condensed milk and sugar and mix well.
  • Then add remaining milk and mix well.
  • Then cover the pan with lid and boil it under low flame.
  • Add cardamom powder and salt when it became thick and mix well and keep it aside.
  • In another pan, heat 1 tab spoon ghee and fry raisins.
  • Add these fried raisins to payasam and mix well and serve it.
Tips
  • You can make this payasam without condensed milk.
  • To get more taste add fried cashew nuts and almond.
  • To get more smell use a little cumin seeds powder.
