Chinese Potato is very tasty item that is like Potato, Colocasia and Yam. This is also known as Koorka in Kerala. I think it is mostly used by Keralites and it will be available on market in the month of November and December. Removing its peel is little bit difficult process but we can use different methods to remove its peel. So try to select big Chinese Potato from market when you buy it. I cannot express its taste by words and I like it very much. We can make variety tasty dishes with this tasty vegetable by using different methods. I have made many dishes with this and all are really tasty and good.
I made spicy Chinese Potato stir fry here. Coconut Pieces is giving good taste to this dish. I used only traditional ingredients to make this dish. It is having the mixed smell and taste of Garam Masala Powder, Fennel Seeds Powder and Cumin Seeds Powder. This is an excellent combination with hot plain Rice for lunch.

Ingredients

Chinese Potato - 250 gm
Onion - 2
Green Chilli - 2
Chopped Garlic - 1 teaspoon
Chopped Ginger - 1 teaspoon
Turmeric Powder - 1/2 teaspoon
Red Chilli Powder - 1 teaspoon
Black Pepper Powder - 1 teaspoon
Coriander Powder - 1/2 teaspoon
Fennel Seeds Powder - 1/4 teaspoon
Garam Masala Powder - 1/2 teaspoon
Coconut Pieces - 1/4 Cup
Coconut Oil - 1 tab spoon
Mustard Seeds - 1 teaspoon
Cumin Seeds - 1/4 teaspoon
Chopped Shallots - 1 teaspoon
Curry Leaves - 2 Sprigs
Salt - To Taste
Water - As required to cooking.

Method
  • Remove the peels of Chinese Potato and Onion and wash well and cut it as small pieces.
  • Wash Green Chilli and slice thin and lengthy.
  • Slice Coconut thin and lengthy.
  • Heat a pan and heat Coconut Oil and splutter Mustard Seeds in it.
  • To this add Cumin Seeds, Chopped Ginger and Chopped Garlic and fry it.
  • Then add chopped Shallots and saute well.
  • Add Curry Leaves and stir well.
  • Then add Green Chilli pieces, chopped Onion, Salt and Coconut Pieces and saute well for 5 minutes.
  • Turn down the fire and add Turmeric Powder, Red Chilli Powder and Coriander Powder and saute it well.
  • Then add Chinese Potato to this and mix well.
  • Pour enough Water to cook and mix well.
  • Cover the pan with lid and cook well under medium flame and stir occasionally.
  • Turn down the fire when Water evaporates completely.
  • To this add Fennel Seeds Powder and Garam Masala Powder and mix well.
  • Turn off the fire and decorate with fried Curry Leaves and serve with hot plain Rice for lunch.
Tips
  • Green Chilli is an optional ingredient so use it if you need.
  • It will be tastier if cook it in Coconut Milk instead of using Water.
  • Make it with only Fennel Seeds or Cumin Seeds.
  • Don't pour too much Water to cook otherwise taste will change.
