Everyone is using rice always especially south Indians are preparing different or variety rice items. Ghee rice is one special rice dish. This is the famous dish for different celebrations or festivals such as Christmas, Easter, birthdays, weddings or any other special celebrations. We can serve ghee rice with vegetarians and non-vegetarians dishes. This is very easy to prepare at home. The main ingredients of ghee rice are Basmati rice and ghee. I have used cardamom powder, cloves, Cinnamon stick and kiss miss to get good taste and good flavour. These all are optional ingredients and we can add based on our preferences. Ghee is not good for cholesterol so we need to use less quantity of ghee to prepare. Taste will not change if we use less quantity of ghee. Mainly this dish is serving for lunch and dinner. We need to take extra care while cooking rice because it shouldn't over cooked. Texture will change completely if we over cook the rice. This is not that much spicy dish so that children can also have without any trouble. In this recipe, I prepared spicy roasted chicken because it is very good combination with ghee rice. Chicken curry also is very good combination with ghee rice. I have used very less quantity of oil to fry chicken so that it will not affect health. I have made this recipe with health conscious. We can select combination with ghee rice as per our choice and serve it. 

Ghee Rice

Preparation Time - 10 minutes
Cooking time - 15 minutes


Basmati Rice - 2 cups
Ghee - 1/2 cup
Hot water - 4 cups
Cinnamon Stick - 2 (1 inch each)
Cloves - 2
Ginger - 1/2 teaspoon
Garlic - 1/2 teaspoon
Cardamom - 2
Sliced onions - 1 cup
Grated carrot - 1/4 cup
Cashew nuts - 10
Kiss miss - 20
Peanuts - 20
Salt - to taste

  • Soak rice in water for at least for 15 minutes and drain water completely.
  • Heat ghee in a pressure cooker and fry peanuts, kiss miss and cashew nuts and keep it aside in a bowl or plate
  • To the pressure cooker add cinnamon stick, cardamom, cloves, ginger and garlic and stir well.
  • Then add onion and carrot to it and fry until golden brown colour
  • Then add rice, hot water and salt and mix well and cook. wait for two whistles
  • Open cooker and add kiss miss, peanuts and cashew nuts and mix slightly and serve.

Chicken Roast

Preparation Time - 10 minutes
Cooking Time - 15 minutes

Ingredients for Marination

Chicken - 1 kg
Turmeric Powder - 1/2 teaspoon
Red chilli Powder - 2 teaspoon
Coriander Powder - 2 1/2 tab spoon
Garam Masala - 1/2 teaspoon
Pepper powder - 1 teaspoon
Ginger paste - 1 teaspoon
Garlic Paste - 1 teaspoon
Onion Paste - 1 teaspoon
Curry leaf paste - 1 teaspoon
Salt - To taste

Method For Marination
  • Wash and clean chicken and cut it as pieces
  • Add all ingredients to chicken pieces and mix well and keep it in refrigerator for 2 hours.
Ingredients For Roasting

Oil - 3 tab spoon
Onion - 2
Tomato Paste - 3 teaspoon
Curry leaves - 2 sprigs
Water - 1/4 cups
Salt - to taste

Method For Roasting
  • In a pan, heat oil and add chicken and shallow fry it and keep it aside.
  • To the same pan add onion slices and stir till brown colour.
  • Then add tomato paste, Curry leaves, salt and water and mix well.
  • Then add shallow fried chicken to it and mix well and cook it for 5 minutes under low flame.
  • Then serve with Ghee rice.

  • Ghee rice taste will change if rice is over cooked so take extra care while cooking it.
  • You can add green peas and beans to get more taste.
  • Try to use hot ghee rice.
