CHICKEN MAPPAS

This is very tasty traditional Kerala style dish. Chicken is the favourite item for non-vegetarians so they are searching new and tasty dishes with chicken. Different chicken dishes will be available in different celebration and functions and in hotels also it is highly demanded item. Today, I would like to share the recipe of tasty chicken mappas. Main thing​ is that we will not add water to prepare this dish while cooking. Instead of water we are using coconut milk so that the taste also will be very nice. Its texture will be very thick and creamy. It is entirely different from other chicken dishes. Another difference is that we will not add red chilli powder to this recipe so that colour also will be changed. Earlier it was using as a special item in Christian weddings, birthdays and other celebrations but now a day its using by some places only because it preparing at home some times. This is an excellent combination with rice, chapati, palappam and bread.  It is a medium spicy dish so that everyone will like this dish very much including children. We are not adding any type of artificial colour in this dish. Main flavour of this dish is coconut milk.  We can prepare this recipe at home very easily. Make this tasty dish and enjoy well.

Preparation Time - 15 minutes
Cooking Time - 30 minutes
Decoration - Fried shallot and curry leaves

Ingredients

Chicken - 1 kg
Onion - 3
Chopped Ginger - 1 tab spoon
Chopped Garlic - 1 tab spoon
Chopped Tomato - 2 tab spoon
Green Chilly - 6
Turmeric powder - 1 teaspoon
Coriander Powder - 3 tab spoon
Pepper Powder - 1 teaspoon
Garam Masala - 1/2 teaspoon
Medium Thick Coconut Milk - 2 1/2 cups
Thick Coconut Milk - 1/2 cup
Coconut Oil - 3 tab spoon
Mustard Seeds - t teaspoon
Shallot - 1 teaspoon
Curry leaves - 2 sprigs
Salt - To taste

Method
  • In a bowl, marinate chicken with Turmeric powder, coriander powder, pepper powder, curry leaves and salt and mix well and leave it for 15 minutes.
  • In a pan, heat 2 tab spoon coconut oil and add ginger, garlic, onion, green chilli and stir well
  • Then add marinated chicken to this and stir well for 5 minutes.
  • Then add medium thick coconut oil and mix well and cover with lid and cook it for 25 minutes.
  • Then add thick coconut milk to this and mix well and boil.
  • Turn off the fire when it boil and keep it aside.
  • In another pan, heat 1 tab spoon coconut oil and add mustard seeds when it splutter add shallot and curry leaves and fry.
  • Then add garam masala and stir well.
  • Then add it to chicken and mix well and serve.
Tips
  • If you want more taste you can use fried cardamom, cloves and cinnamon stick.
  • You can use only Shallots instead of using onion.
  • If you want you can add a little Chilli Powder without colour change.

RED COWPEAS COCONUT MILK STIR FRY

Cooking Time - 25 Minutes

Ingredients

Red Cowpeas - 1 Cup
Onion - 1
Green Chilli - 1
Turmeric Powder - 1/2 teaspoon
Red Chilli Powder - 1/2 teaspoon
Black Pepper Powder - 1/2 teaspoon
Coconut Milk - 1/2 Cup
Coconut Oil - 1 teaspoon
Mustard Seeds - 1 teaspoon
Chopped Shallots - 1 teaspoon
Curry Leaves - 2 Sprigs
Salt - To Taste
Water - As required for cooking

Method

Sock Red Cowpeas in Water overnight and wash it well next day.Peel the skin of Onion and wash well and chop it.Wash Green Chilli and slice it thin and lengthy.Take a pan and put Red Cowpeas, chopped Onion, sliced Green Chilli, some Curry Leaves, Salt and enough Water to cooking and cover it and cook well.Heat a small pan and heat Coconut Oil and splutter Mustard seeds in it.Then add chopped Shallots and Curry Leaves and fry well.Turn down the fire and add Turmeric Powder, Red Chilli Powder and Black Pepper Powder and saute well until remove raw smell.Add cooked Red Cowpeas into this and mix well.…
