Bitter Gourd is very healthy vegetable which has bitter taste and its health benefits are unlimited. It helps to reduce sugar and cholesterol from body if use it on daily basis. It contains a lot of Iron content which helps to improve the health of Bones. Long Beans also is healthy vegetable which contains proteins and fibers. It is very soft and has good taste. These two vegetables are available in everywhere and we can cultivate it in houses for our requirements. Here, I am going to share variety stir fry which is called as the Mixed Bitter Gourd and Long Beans Stir fry. This is the combination of two health vegetables so I can say that this dish is very healthy. May be this name is new to everybody. We can make variety dishes by mixing different vegetables based on our taste. I am really happy to share this new recipe to everyone because it can give new experience to everyone. This recipe will be helpful to everyone especially those who needs healthy and tasty new dishes.
It is very tasty and easy stir fry and nobody knows about this variety stir fry. I am making this stir fry some times in my house. It is my mother's recipe and very simple and we can use it as the side dish with rice for lunch and dinner. We know that bitter gourd has bitter taste but it will become reduce if we mix with long beans. I have added more onion to this stir fry to get good taste. We can make it with turmeric powder if we need. It will have the mixed taste of bitter gourd and long beans. Let us enjoy with this variety, tasty and healthy new dish. 

Preparation Time - 10 minutes
Cooking Time - 20 minutes


Chopped Bitter Gourd - 1/2 cup
Long Beans Slices - 1/2 cup
Onion - 3
Green Chilli - 4
Grated Coconut - 1/2 cup
Curry Leaves - 2 sprigs
Coconut Oil - 1 tab spoon
Cumin Seeds - 1/2 teaspoon
Salt - To taste
Water - 1/4 cup

  • In a pan, heat coconut oil and add cumin seeds and fry it.
  • Then add curry leaves, chopped onion and green chilli and stir well.
  • To this add chopped bitter gourd, sliced long beans and salt and mix well.
  • Pour water to this and cover the pan with lid and cook it for 5 minutes.
  • Then remove the lid and stir well and add grated coconut and mix well.
  • Cover the pan with lid and cook it well under low flame and stir occasionally.
  • Then mix it well and transfer it in a serving bowl and serve it.
  • To get correct taste of this stir fry try to choose Bitter Gourd which has less bitter taste.
  • Its taste will increase if you use only Shallots instead of using onion.
  • You can use Bird's Eye Chilli instead of using Green chilli to get tasty and healthy dish. 
  • You can add fresh Coconut Oil after making this dish.
  • Its taste will increase if add Mustard seeds.

I can say that it is entirely different from other fish curries because its colour and method of preparation is completely different from others. It can make it by using any type of fishes. Better to make it with king fish but here I have used Mackerel fish because I couldn't get king fish. Usually we are making spicy red colour fish curry in houses and hotels. Keralites can't eat rice without fish curries or dishes because fishes are the main side dish of their daily day life. It will be available in some standard hotels and it has a royal effect.
