Everybody knows about coconut very well and it is necessary to each and every curries. Commonly we are using coconut in vegetarian and non-vegetarian dishes and some dishes are cooking in coconut milk. It is also using to make payasam. Coconut will be available in Kerala and every house will have coconut for income or homely needs. If you don't have it will be available on markets at any time. Coconuts are mainly used by Keralites and they can't avoid this for their daily day life. Coconut has a lot of health benefits and coconut sprout also have a lot of health benefits like coconut. Coconut sprout is available in rainy season and it is coming from inside the coconut. Its colour is not pure white like coconut, it will have dim white colour. Its size will be very small when it starts to grow after that its size is increasing day by day. It is very soft and will have medium sweet taste and we can make different variety dishes by using this coconut sprout. I think nobody is aware about its dishes because everyone is having it directly. We can try different dishes with coconut sprout like other fruits and vegetables. Coconut sprout payasam, coconut sprout salad, masala stir fry and juices are easy and tasty dishes of this. It contains a lot of protein, vitamin C, zinc, magnesium, iron and calcium. It is very helpful to reduce cholesterol level, increase skin glow and reducing ageing problems because it contains anti-oxidants. Coconut sprout is an excellent combination with milk so I made this special milk shake. It is very easy to make but taste is really good. This milk shake is looking very attractive. It needs very less ingredients and cinnamon powder is giving good smell and flavour. It can reduce hungry immediately and helps to increase immunity power. Condensed Milk and honey give creamy effect to this milk shake. Coconut sprout will become paste very fast so it will combine with other ingredients very easily. It can use at any time and it will be very special and new to everyone. Enjoy with this sweet and creamy milk shake.

Chopped Coconut Sprout - 1 cup
Chilled Milk - 1 cup
Condensed Milk - 2 tab spoon
Honey - 2 tab spoon
Cinnamon Powder - 3/4 teaspoon
Ice Cubes - 4

  • Wash coconut sprout well and chop it well and put it in a blender.
  • Pour a little chilled milk to this and blend it and make fine paste.
  • Then pour remaining chilled milk, condensed milk, cinnamon powder, honey and ice cubes and blend it well together until smooth and frothy.
  • Pour it in a serving glass and decorate with coconut sprout pieces and serve it fresh and cold.
  • To get sweet you can use sugar instead of honey and condensed milk.
  • You can use vanilla essence instead of cinnamon powder.
  • To get more tasty and healthy milk shake you can add almond and cashew nut paste.

Red Cowpeas - 1 Cup
Onion - 1
Green Chilli - 1
Turmeric Powder - 1/2 teaspoon
Red Chilli Powder - 1/2 teaspoon
Black Pepper Powder - 1/2 teaspoon
Coconut Milk - 1/2 Cup
Coconut Oil - 1 teaspoon
Mustard Seeds - 1 teaspoon
Chopped Shallots - 1 teaspoon
Curry Leaves - 2 Sprigs
Salt - To Taste
Water - As required for cooking


Sock Red Cowpeas in Water overnight and wash it well next day.Peel the skin of Onion and wash well and chop it.Wash Green Chilli and slice it thin and lengthy.Take a pan and put Red Cowpeas, chopped Onion, sliced Green Chilli, some Curry Leaves, Salt and enough Water to cooking and cover it and cook well.Heat a small pan and heat Coconut Oil and splutter Mustard seeds in it.Then add chopped Shallots and Curry Leaves and fry well.Turn down the fire and add Turmeric Powder, Red Chilli Powder and Black Pepper Powder and saute well until remove raw smell.Add cooked Red Cowpeas into this and mix well.…
