IVY GOURD RED CHILLI STIR FRY

Preparation Time - 10 Minutes
Cooking Time - 20 Minutes

Ingredients

Ivy Gourd - 250 gm
Onion - 1
Shallots - 5
Green Chilli - 1
Turmeric Powder - 1/2 teaspoon
Dried Red Chilli - 6
Garam Masala Powder - 1/2 teaspoon
Coconut Oil - 1 tab spoon
Mustard Seeds - 1 teaspoon
Curry Leaves - 2 Sprigs
Salt - To Taste
Water - Required for cooking

Method
  • Wash Ivy Gourd well and cut it thin and round shape pieces.
  • Remove the skin of Onion and Shallots and slice it thin and lengthy.
  • Wash Green Chilli well and chop it.
  • Crush dried Red Chilli with some Water.
  • Heat a pan and heat Coconut Oil in it and splutter Mustard Seeds.
  • Then add Curry Leaves and Green Chilli and fry it.
  • Then add sliced Onion and Shallots and add Salt to taste and saute well.
  • Then add Turmeric Powder, crushed dried Red Chilli and saute well.
  • Then add Ivy Gourd pieces, Salt and pour a little Water and saute well for 5 minutes.
  • Cover the pan with lid and cook it well and stir it well under low flame until dry and make it fry as desired.
  • To this add Garam Masala Powder and mix well.
  • Turn off the fire and put it in a serving bowl and serve it with Rice, Chapati and Appam.
Tips
  • You can slice Ivy Gourd thin and lengthy instead round shape.
  • You can use Black Pepper Powder instead Green Chilli.
  • Fennel Seeds Powder also useful to get good flavour instead Garam Masala Powder.
  • Use any Vegetable Oil instead Coconut Oil.
  • Don't pour too much Water for cooking this otherwise it will become overcook.
