Preparation Time - 10 Minutes

Carrot - 250 gm
Garlic - 2
Green Chilli - 2
Shallots - 5
Onion - 1
Turmeric Powder - 1/2 teaspoon
Red Chilli Powder - 1/4 teaspoon
Cumin Seeds - 1/2 teaspoon
Grated Coconut - 1/2 Cup
Coconut Oil - 1 teaspoon
Mustard Seeds - 1 teaspoon
Curry Leaves - 2 Sprigs
Salt - To Taste
Water - Required for cooking


  • Peel the skin of Carrot and wash it well and chop it.
  • Remove the peel of Garlic, Onion and Shallots and wash well and chop it.
  • Wash Green Chilli well and chop it.
  • In a grinder, add Grated Coconut, chopped Green Chilli, Turmeric Powder, Red Chilli Powder, Cumin Seeds, some Curry Leaves, Salt and pour a little Water and crush well.
  • Heat a pan and heat Coconut Oil and splutter Mustard seeds.
  • Add chopped Garlic and some Curry Leaves and fry it.
  • Add chopped Shallots and chopped Onion into this and add Salt to taste and saute until Brown colour.
  • Then add chopped Carrot into this and stir well for 2 minutes.
  • Add crushed Grated Coconut mixture into this and mix well.
  • Pour a little Water into this and cover it and cook it well and stir occasionally.
  • Turn off the fire when Water evaporates completely and mix well.
  • Serve it in a serving bowl with hot plain Rice.
  • You have to buy fresh and Orange colour Carrot for making this dish.
  • You can add a little Lime Juice if you need.
  • You can crush Garlic instead frying.
  • Its taste will increase based the quantity of Shallots.
  • Avoid Cumin Seeds if don't like its smell and taste.
  • Adjust the quantity of spices as per your taste.
  • To get exact taste try to chop Carrot very small.
