DRUMSTICK WITH COCONUT CURRY

Preparation Time - 15 Minutes Cooking Time - 25 Minutes Ingredients Drumsticks - 250 gm Onion - 2 Tomato - 1 Green Chilli - 1 Turmeric Powder - 1/2 teaspoon Red Chilli Powder - 1 teaspoon Coriander Powder - 2 teaspoon Cumin Seeds - 1 teaspoon Grated Coconut - 1/2 Cup Coconut Oil - 1 tab spoon Mustard Seeds - 1 teaspoon Chopped Shallots - 1 teaspoon Curry Leaves - 2 Sprigs Salt - To Taste Water - Required for cooking Method Wash Drumstick well and cut it 1 1/2 half inch lengthy. Peel the skin of Onion and wash well and slice it thin and lengthy. Wash Tomato and chop it. Wash Green Chilli well and slice it lengthy. In a grinder, add Grated Coconut, Cumin Seeds, Salt, some Curry Leaves and enough Water and make thick paste. Heat Coconut Oil in a pan and splutter Mustard Seeds in it. RED COWPEAS COCONUT MILK STIR FRY

Preparation Time - 10 Minutes Cooking Time - 25 Minutes Ingredients Red Cowpeas - 1 Cup Onion - 1 Green Chilli - 1 Turmeric Powder - 1/2 teaspoon Red Chilli Powder - 1/2 teaspoon Black Pepper Powder - 1/2 teaspoon Coconut Milk - 1/2 Cup Coconut Oil - 1 teaspoon Mustard Seeds - 1 teaspoon Chopped Shallots - 1 teaspoon Curry Leaves - 2 Sprigs Salt - To Taste Water - As required for cooking Method Sock Red Cowpeas in Water overnight and wash it well next day. WATERMELON PANNACOTTA

It is very sweet and tasty dessert which is made by sweet Watermelon. Watermelon is very big, sweet and red colour fruit. We can make juice, milk shake and ice cream with this. Today, I made very sweet dessert with this sweet fruit. It has the mixed taste of both fresh cream and coconut milk. I used Vanilla Essence to get good taste and flavour. Usually we are making pannacotta with two colours but here I mixed fruit and cream so it is having only one colour. Its taste is entirely different from other dessert so it can be used for special occasions. SOLE FISH FRY

Preparation Time - 10 Minutes Cooking Time - 15 Minutes Decoration - Curry Leaves Ingredients Sole Fish - 500 gm Turmeric Powder - 1/2 teaspoon Red Chilli Powder - 1 teaspoon Coriander Powder - 1 teaspoon White Pepper Powder - 1 teaspoon Curry Leaves Powder - 1 teaspoon Coconut Oil - As required for frying Lime Juice - 1 teaspoon Salt - To Taste Water - As required Method Clean Sole fish well and cut it as small pieces and wash it well for 3 times and keep it aside. In a small pot, add Turmeric Powder, Red Chilli Powder, Coriander Powder, White Pepper Powder, Curry Leaves Powder, Lime Juice, enough Salt and a little Water and make thick paste. Marinate fish pieces with this paste and leave it for sometimes. Heat a frying pan and pour Coconut Oil and place marinated fish pieces one by one and fry both sides well. WATERMELON WINE Preparation Time - 15 Minutes Ready In - 21 Days Ingredients Watermelon Cubes - 500 gm Sugar - 500 gm Yeast - 1/4 teaspoon Crushed Wheat - 1 tab spoon Cloves - 10 Cinnamon Stick - 2 small pieces Water - 2 Liters Method Remove the skin and seeds of Watermelon and wash well and cut it as small cubes. Boil Water in a pan and make it cool. Take a dried jar and put 250 gm Watermelon cubes into this. Add 250 gm Sugar on this and add remaining 250 gm Watermelon cubes then. To this add remaining 250 gm Sugar, Yeast, crushed Wheat, Cloves and Cinnamon Stick. Finally pour boiled and cooled Water and tight the jar as much you can. Stir it once with a wooden ladle in the evening time daily.  Do it until 21 days and strain it and store it in a wine bottle for long term. Tips Choose sweet and red colour Watermelon to make wine. You can adjust the quantity of Sugar as per your taste. If you need more sweet taste and colour use caramelised Sugar. Use
