DRUMSTICK WITH COCONUT CURRY

Preparation Time - 15 Minutes
Cooking Time - 25 Minutes

Ingredients

Drumsticks - 250 gm
Onion - 2
Tomato - 1
Green Chilli - 1
Turmeric Powder - 1/2 teaspoon
Red Chilli Powder - 1 teaspoon
Coriander Powder - 2 teaspoon
Cumin Seeds - 1 teaspoon
Grated Coconut - 1/2 Cup
Coconut Oil - 1 tab spoon
Mustard Seeds - 1 teaspoon
Chopped Shallots - 1 teaspoon
Curry Leaves - 2 Sprigs
Salt - To Taste
Water - Required for cooking

Method

  • Wash Drumstick well and cut it 1 1/2 half inch lengthy.
  • Peel the skin of Onion and wash well and slice it thin and lengthy.
  • Wash Tomato and chop it.
  • Wash Green Chilli well and slice it lengthy.
  • In a grinder, add Grated Coconut, Cumin Seeds, Salt, some Curry Leaves and enough Water and make thick paste.
  • Heat Coconut Oil in a pan and splutter Mustard Seeds in it.
  • Add chopped Shallots into this and fry it.
  • Then add Curry Leaves and stir well.
  • Add sliced Onion along with Salt and saute well for sometimes.
  • Then add sliced Green Chilli and chopped Tomato and saute well.
  • Add Turmeric Powder, Red Chilli Powder and Coriander Powder and saute well until remove the raw smell.
  • Add Coconut and Cumin Seeds paste and mix well.
  • Then add Drumstick pieces into this and saute well for two minutes.
  • Add enough Salt and Water to this and cover it and cook it well under medium flame and make it thick as desired.
  • Turn off the fire and serve it in a serving bowl with Appam and Rice.
Tips
  • Choose medium size Drumstick to make this dish.
  • You can use only Shallots instead Onion.
  • Use Fennel Seeds powder and Garam Masala Powder instead Cumin Seeds powder.
  • To get creamy effect use Coconut Milk.
  • You cab adjust the quantity of masala powders and thickness as per your taste.

Ingredients

Red Cowpeas - 1 Cup
Onion - 1
Green Chilli - 1
Turmeric Powder - 1/2 teaspoon
Red Chilli Powder - 1/2 teaspoon
Black Pepper Powder - 1/2 teaspoon
Coconut Milk - 1/2 Cup
Coconut Oil - 1 teaspoon
Mustard Seeds - 1 teaspoon
Chopped Shallots - 1 teaspoon
Curry Leaves - 2 Sprigs
Salt - To Taste
Water - As required for cooking

Method

Sock Red Cowpeas in Water overnight and wash it well next day.Peel the skin of Onion and wash well and chop it.Wash Green Chilli and slice it thin and lengthy.Take a pan and put Red Cowpeas, chopped Onion, sliced Green Chilli, some Curry Leaves, Salt and enough Water to cooking and cover it and cook well.Heat a small pan and heat Coconut Oil and splutter Mustard seeds in it.Then add chopped Shallots and Curry Leaves and fry well.Turn down the fire and add Turmeric Powder, Red Chilli Powder and Black Pepper Powder and saute well until remove raw smell.Add cooked Red Cowpeas into this and mix well.…
