KOZHUKKATTA (Traditional Kerala Snack) Recipe, How To Make Kozhukkatta

Kozhukkatta is one of the traditional Kerala Snacks that can easily prepared by Rice Flour.

Preparation Time - 15 Minutes
Cooking Time - 20 Minutes

Ingredients

Rice Flour - 1 Cup
Grated Coconut - 1 Cup
Jaggery - 250 gram
Cumin Seeds - 1 teaspoon
Cardamom Powder - 1 teaspoon
Water - As required for cooking
Salt - 1 Pinch

Method Of Preparation
  • Strain the Rice Flour and roast it well and keep it aside.
  • Make Jaggery Syrup and strain well and keep it aside.
  • Boil some Water with Salt in a bowl and pour it little by little in a strained Rice Flour and make a dough as like for Chapati.
  • Then make some bolls from the dough and keep it aside.
  • Add Grated Coconut, Cumin Seeds and Cardamom  Powder in a strained Jaggery Syrup and mix well until soft and make Coconut Jaggery Stuff.
  • Take the dough ball one by one and make it flatten with your fingers and place the Coconut Jaggery Stuff in the middle of each flattened dough. 
  • Then roll it again and make it neat round shape balls and put it in a steamer and cover it and steam it well under medium flame.
  • Let it cool for sometimes and serve it and enjoy.
Tips
  • You can use Cumin Seeds Powder instead Cumin Seeds.
  • It can also make by using Sugar Syrup instead Jaggery Syrup

RED COWPEAS COCONUT MILK STIR FRY

Ingredients

Red Cowpeas - 1 Cup
Onion - 1
Green Chilli - 1
Turmeric Powder - 1/2 teaspoon
Red Chilli Powder - 1/2 teaspoon
Black Pepper Powder - 1/2 teaspoon
Coconut Milk - 1/2 Cup
Coconut Oil - 1 teaspoon
Mustard Seeds - 1 teaspoon
Chopped Shallots - 1 teaspoon
Curry Leaves - 2 Sprigs
Salt - To Taste
Water - As required for cooking

Method

Sock Red Cowpeas in Water overnight and wash it well next day.Peel the skin of Onion and wash well and chop it.Wash Green Chilli and slice it thin and lengthy.Take a pan and put Red Cowpeas, chopped Onion, sliced Green Chilli, some Curry Leaves, Salt and enough Water to cooking and cover it and cook well.Heat a small pan and heat Coconut Oil and splutter Mustard seeds in it.Then add chopped Shallots and Curry Leaves and fry well.Turn down the fire and add Turmeric Powder, Red Chilli Powder and Black Pepper Powder and saute well until remove raw smell.Add cooked Red Cowpeas into this and mix well.…

DRUMSTICK WITH COCONUT CURRY

Ingredients

Drumsticks - 250 gm
Onion - 2
Tomato - 1
Green Chilli - 1
Turmeric Powder - 1/2 teaspoon
Red Chilli Powder - 1 teaspoon
Coriander Powder - 2 teaspoon
Cumin Seeds - 1 teaspoon
Grated Coconut - 1/2 Cup
Coconut Oil - 1 tab spoon
Mustard Seeds - 1 teaspoon
Chopped Shallots - 1 teaspoon
Curry Leaves - 2 Sprigs
Salt - To Taste
Water - Required for cooking

Method

Wash Drumstick well and cut it 1 1/2 half inch lengthy.Peel the skin of Onion and wash well and slice it thin and lengthy.Wash Tomato and chop it.Wash Green Chilli well and slice it lengthy.In a grinder, add Grated Coconut, Cumin Seeds, Salt, some Curry Leaves and enough Water and make thick paste.Heat Coconut Oil in a pan and splutter Mustard Seeds in it.Add chopped Shallots into this and fry it.Then add Curry Leaves and stir well.Add sliced Onion along with Salt and saute well for sometimes.Then add sliced Green Chilli and chopped Tomato and saute well.Add Turmeric …
